I’m getting ready to spend some quality time with the sun this weekend. I’ve been making sure I work out nearly every day so that I can be bikini-ready. Unfortunately, I never really start thinking about eating healthy or really sticking to my exercise routines until it’s already summer… and usually that’s too late to make any changes.
Added to that, I drove past White Castle the other day and have been craving it ever since (add any other fast food place to that list, too). It has probably been over a year since I’ve eaten one of those cute little sliders. I needed to eat them.
But, instead of blowing my diet (diet being a loose term here), I found this recipe for healthy-ish White Castle style sliders.
White Castle Style Sliders
Adapted from Hungry Girl 1-2-3
Makes 4 Servings
1 ¼ lb. ground beef
¾ tsp. onion powder
¾ tsp. garlic powder
½ tsp. salt
½ tsp. black pepper
1 tbsp. olive oil
1 c. chopped onion
16 King’s Hawaiian Sweet Rolls or dollar rolls
16 dill pickle slices
In a bowl, combine ground beef, onion powder, garlic powder, salt, and pepper. Evenly divide into 16 balls. Form each ball into a patty, then form each patty into a square. With the back of a spoon, form four to five holes in each of the patties. Place on a plate, cover with plastic wrap, and place in the freezer for five to ten minutes.
Meanwhile, heat a pan with olive oil over medium heat. Add onions and cook until translucent, about five minutes.
Remove patties from the freezer and place hole-side down in the pan. Cover. Continue to cook for about 5-7 minutes, until cooked through.
Serve on rolls with pickles slices. If desired, top with ketchup or mustard.
